The main kitchen fared only marginally better. Between August 1 and August 27, staff had 216 scheduled opportunities to record temperatures for two refrigerators and two freezers, checking twice each day. They recorded 104. That left 112 gaps, more than half the required checks, with no documentation that anyone verified the food stored there was being kept at a safe temperature.
The facility's own policy, dated June 18, 2025, required the Dining Services Manager to record refrigerator and freezer temperatures daily without exception.
When inspectors interviewed the Dietary Manager on the morning of August 28, she confirmed the temperatures had not been recorded as required for morning and evening monitoring.
The violation was cited at a level of minimal harm or potential for actual harm, affecting many residents.
What the logs cannot show is what the temperatures actually were during those unrecorded stretches. That is the point of monitoring. Without the checks, there is no way to know whether food stored in those units remained safe to serve to the residents eating it every day.
