The dietary manager, interviewed the following morning, confirmed the number was wrong. He said the potato salad should have been portioned into smaller pans and set on ice. Then he said the satellite kitchen didn't have a cooling spot for cold items. Then he said they didn't have enough pans.
That same inspection, on the morning of August 26, an inspector watched four room trays get loaded onto a cart and wheeled down the 600 hall. The plates had dome covers. The oatmeal and applesauce did not. They rode uncovered through the hallway to residents eating in their rooms.
The dietary manager said the kitchen lacked covers for bowls and cups. He said he had raised it with the nursing home administrator. The administrator, interviewed separately, said he hadn't known the covers were missing. He said he would get them ordered as soon as possible and would talk to the dietary manager about what was needed.
The covers, as of the inspection, had not been ordered. The administrator said he planned to purchase them in September 2025.
Inspectors also observed a dietary aide reach into a bag of chips with her bare hand, then handle a hamburger patty from a pan without using tongs. The dietary manager said she should have changed her gloves after the chip bag and should have used tongs for the patty. He said he would provide staff education on hand hygiene.
The inspection, filed as a complaint survey, cited violations affecting many residents across all three findings.
