Inside one commercial freezer, inspectors found a pot roast that was partially unwrapped, had no label, had no date, and had developed freezer burn, a sign it had been sitting there long enough for ice crystals to degrade the surface of the meat.
The dietary manager had been in her role for four weeks. She told the inspector she was not sure why the canned foods had not been labeled with delivery dates, and she did not know how the dented cans had ended up on the rack. She said her staff had been trained to label food when it arrived from suppliers and that she had been working to reinforce that training. On the question of the dented cans, she said she does not return them to the supplier because the replacement process takes too long. She throws them out instead. She had not thrown these out.
A dietary aide interviewed two days later acknowledged that labeling food mattered for safety and said staff may have missed some items.
The administrator's response to the inspection raised a separate concern. When asked on June 3 to provide the facility's policies for the kitchen and food and nutrition services, the administrator said there were no specific policies for the kitchen.
