Williamsville Suburban: Kitchen Safety Failures Found - NY
Those were among the first things inspectors found when they walked into Williamsville Suburban on December 18, 2025.
In the South Building kitchen at noon, two staff members were working the tray line without beard nets, their facial hair between a half-inch and three-quarters of an inch long. Two other employees came in from different departments to use the ice machine, neither wearing a hair net. The rags being used to wipe down surfaces were yellowed with visible soiling and sitting dry on the counter, not soaking in sanitizing solution as required.
Dietary Aide No. 1 told inspectors the facility didn't provide beard nets, then pulled the hair net off their head and placed it over their beard. Dietary Aide No. 2 said they had never been given one. Food Service Supervisor No. 1 confirmed the facility had no beard nets, acknowledged workers with beards should be wearing them, and noted that staff from other departments routinely came into the kitchen to use the ice machine.
Two hours later, inspectors checked the dishwashing machines. Neither building had chlorine test strips to verify sanitizer levels. In the South Building, the dishwasher's thermometer held steady between 40 and 60 degrees before, during, and after a full cycle. In the North Building, one thermometer was encased in hard film and couldn't be read at all. The other read 100 degrees and never moved.
The Food Service Director said plainly: without test strips, they did not know whether the sanitizer level was acceptable. The Maintenance Director said no one had told him the thermometers were broken.
The next morning, a staff member was working the tray line in the North Building without a hair net. When asked about a kitchen cleaning schedule, the Food Service Director said there wasn't one currently in use. An old schedule had been found, but it needed to be reviewed before anyone would use it.
The administrator told inspectors that kitchen cleanliness had improved since a new Food Service Director came on board, and was "headed in the right direction, but was not where it needed to be yet."
